Yesterday I found three good sized zucchini in the fridge I was coming close to forgetting about. I sautéed slices of one for yesterday's lunch and I made a mental note to make zucchini bread today from the other two.
Considering I spent all day thinking today was Monday (when it was actually Tuesday), I'm so glad I didn't forget the plan to make these. Mmmmmmm...
So something good did come out of your missing day. These look wonderful.

ReplyDeleteTurned out tastey, but possibly because a third of the flour I used was ground hard wheat, these came out a little drier than I think quick bread tends to be. We won't let that deter us, though.
DeleteZucchini bread is one of my favourites - but zucchini muffins are just as good.

ReplyDeleteLinda, the recipe I use has cinnamon, nutmeg and cloves in it. It's a nice change from what I consider its cousin, banana bread. No taste of banana, but yummy with the spices mentioned.
DeleteOhhh I do love zucchini bread (and it is the only way I eat zucchini). My forgetter is working overtime these days, don't feel bad.
